Paleo focuses on real food.  Vegetables, fruit, meat and quality fat sources are the staples.  The Paleo lifestyle puts an emphasis on food quality instead of food quantity.  We do not count calories because you can't over eat when you are eating real food.

Paleo removes three food toxins from your diet - gluten, refined sugar and industrial seed oil.  There are other  grey area foods like legumes, dairy and white potatoes that are limited based on your tolerance.  It is recommended that you spend 30 days without grains, legumes (including peanuts and soy), dairy, and white potatoes.  This gives your gut time to rest and you will have a clear sense of how foods make you feel when you reintroduce them.

Paleo isn't all about food. Neglecting sleep and stress management will stall any move towards health.  Making sure you are getting at least 8 hours of sleep and you are practicing some sort of stress management is imperative.  Having fun and spending time in community with others is what makes us human - don't forget these important elements of health as well.
